Eggs are an Excellent Food Choice!

Loaded with nutrients and tastes great!

I have been working on meal planning with my Healthy Eating & Active Living Program participants and we have been chatting about foods that are good for you and are delicious at the same time.  And, that are simple to make.

One recipe that fits the above criteria is the Egg Muffin Recipe. It is made with eggs (super nutritious) and a variety of different coloured vegetables (also super nutritious) 😊

 

Following are some of their benefits:

 

  • High quality protein…most of which is found in the egg whites. It contains all nine essential amino acids!

  • Nutrient rich. Did you know that they contain 40% of your daily vitamin D requirements! Eggs also contains folate, selenium, vitamins A, D, E, B2, B5, B12, iron, iodine and phosphorous. 

  • Helps keep you feeling full longer…great for weight management as you are not as hungry and can better manage your cravings.

  • Raises levels of good cholesterol.  Higher levels of good cholesterol can help reduce your risk of heart disease.

  • A good source of Omega-3. They contain a similar type of Omega-3 as found in fish.  So, if you are not a fish lover, then eggs are a great choice. These healthy fats are great for brain and heart health.

  • Contains Lutein and Zeaxanthan which are antioxidants that play a role in eye health and help reduce the risk of age related macular degeneration.

At one time eggs were thought to be bad for us and associated with heart disease as they contain a high level of cholesterol…one egg contains about 2/3 of your daily requirement.

However studies now show that cholesterol is not the problem.  It is saturated fats that have a bigger impact on blood cholesterol.  If you do have high cholesterol, chat with your doctor or nutritionist about the cholesterol and saturated content of the foods you eat.
