Fall is a beautiful time to get outside and be active! The weather is perfect as it is not too hot! Fall is great for hiking, camping, biking, walking, apple picking, watching football, etc.

However, trying to squeeze in all the fun stuff and find the time to feed the family a healthy meal can be challenging. Well, I have a solution for you; it has helped me out and I know it can do the same for you.

Instead of stressing over ingredients and recipes, you should be outside enjoying the crisp fall air, or doing something fun with your family. So, to make things easier on you this season, I’ve put together a collection of healthy and mouth-watering crockpot recipes that are super easy to make.

It truly wouldn’t be fall without a warm bowl of chili and nothing is more fall than pumpkin-flavored everything. Well, these two classics come together to make this delicious chili filled with beans, lean meat, and loads of flavor. Slow Cooked Chicken Italian

With a prep time of only 15 minutes, this slow cooker Italian meal by Camilla Hawkins of Fab Food 4 All will be the easiest dinner you’ve made in a while! This dish filled with herbs, vegetables, and chicken is perfect for serving over rice or pasta.

Espresso Pulled Pork

This recipe is by Don Baiocchi of Paleo Gluten-Free Guy. It’s incredibly easy to make, full of amazing flavors, and does not use any processed ingredients. And, you can tailor it to your spice preferences. 

Spaghetti Squash and Meatballs

This is the perfect slow cooker meal for anyone on a time crunch. This Spaghetti Squash and Meatballs recipe by Sandy Clifton of Simply Happy Foodie uses frozen meatballs and jarred sauce. All you have to do is put the ingredients in with the spaghetti squash. It can’t be any easier than that.

Spaghetti squash is a healthy alternative to pasta because it’s delicious and low in calories. 100 g provides just 31 calories and contains no saturated fats or cholesterol and is rich in dietary fibre, anti-oxidants, minerals, vitamins. 

Mexican Chicken

Amanda Moring of Totally the Bomb has a fabulous crockpot meal for when you’re in the mood for Mexican food, but need it done quick. Simply throw three ingredients into the crockpot, and you’re all set for dinner! Try this with corn tortillas or rice to round out the dish. 

Complete Chicken Dinner in Crockpot

This dish by Dina-Marie Oswald of Cultured Palate is the best for keeping your dinners exciting. You will never get fed up with this meal as there are many options for what vegetables you can use. With warm broth and juicy chicken, this chicken dinner will quickly become a fall favorite. 

Overnight Slow Cooker Apple Cinnamon Oatmeal

Usually, when we think of our crockpot, a hearty and warm dinner comes to mind. But your crockpot can be used for a lot more than just dinners. Try this recipe for easy and timesaving overnight oats created by Charla Harris of That Girl Cooks Healthy. The apple and cinnamon are an ideal staple for a delicious fall breakfast. 

Whole 30 Slow Cooker Chicken Thighs with Butternut Squash and Spinach

Whole 30 meals are great for utilizing fresh and basic ingredients. This dish by Robin Gagnon of Mom Foodie sticks to healthy favorites and only takes 8 minutes to prep! You’ll get in your serving of vegetables with the spinach and lots of nutrients like fiber, potassium, and vitamin A from the butternut squash. 

Red Beans and Rice

This Red Beans and Rice recipe by Jaime Gibbs of Bubbling Brook Budget is not only a super-fast meal to prep and cook but also an excellent meal for your budget. It uses common staple ingredients that are very inexpensive. This warm bowl of beans will leave you feeling very cozy this fall season. 

Stuffed Peppers

Jamie Yonash of Life is Sweeter by Design has a fun meal that is great to start eating healthy this fall. You get in your lean meats and veggies along with plenty of yummy flavors. This dish looks fancy and delicious while also being simple and nutritious!
